How do I ferment idly/ dosa batter in winters? I tried everything and its not getting fermented.  Also please let me know a good recipe or ingredients to make soft dosas.

hi, used idly rice 3 cups and urad (whole or split) 1 cup + 1 table spoon methi seeds, soak rice and urad over night separately, after you have you batter ready the turn on the light in the oven and place it over night, enjoy idly dosa.

Fermenting Process:
After grinding keep the batter in oven with lights on for 8 -12 hours, batter will be fermented.



Smitha 
Recipe for Dosa: 
2 cup regular rice , 1 cup white urad dal, 1 fistful of each Chana , toor dal and poha. 
Add 1/2 tbsp methi seeds . Soak 5-6 hrs  
Grind and ferment in oven
